This recipe is great for those looking to incorporate more vegetables into their meals or those looking to try plant based meals. My husband and I have been trying to get back on our “Meatless Monday” routine, but every now and then I create a meal that can be eaten with or without meat. For this recipe, I used chicken sausage, which you have the option of leaving out if you’re looking to create a vegetarian meal.
This Lemon Garlic Vegetable Pasta recipe is completely lazy proof and takes less than 30 minutes to make. If you want to add more color to your plate, give this recipe a try!
Ingredients
Chicken Sausage (optional)
Pasta noodles (I used thin spaghetti, but you can use your preferred pasta)
Wegman’s Lemon Garlic Marinade
Olive oil
Garlic
Cherry tomatoes
Spinach
Broccoli
Mushrooms
Red onions
Directions
Rinse, chop, and clean your vegetables and set aside in a bowl. Leave garlic and tomatoes on the side. Pour your Wegman’s Lemon Garlic Marinade over your vegetables and refrigerate for 15-20 minutes. Slice your chicken sausage and add to the pan to cook. Once thoroughly cooked, set to the side. Add olive oil to your skillet and saute your garlic and tomatoes. Add marinated vegetables to the skillet and simmer. Boil pasta until tender, and drain. Combine vegetables, pasta, (and the chicken sausage if you prefer) and viola!
